Summer in the Philippines is not only fun,
but sweet as well because of the sweet fruits that are also abundant during
this season like mangoes. It seems like every corner of the city is full of
sweet yellow mangoes.
Yesterday, I bought 2 kilograms of ripe
mangoes to a street vendor in front of our office. I kept on thinking what
better recipe to do with mangoes, then, I remembered the Mango Overnight Oats
that I have read before at Peachy’s
Kitchen.
I already have the old fashioned rolled oats and the non-fat milk at home, all I needed was the Greek yogurt. Luckily, there’s one brand being sold at SM, if I haven’t found any I’ll settle with plain yogurt.
With my basic ingredients already complete,
it’s time to make my first ever Overnight Oats. I don’t have the exact
measurements for this recipe because my measuring cups were already locked in
the other room. The helpers were already asleep, I don’t want to wake them up
just to get the box where I kept my baking tools which is in their room. So
that means, everything here is estimated:
1 cup Old Fashion Rolled Oats
1 250ml Non-Fat Milk
1 120g Greek Style Yogurt
1 1/2 Medium size Mango
The process is very simple, all I did was mix everything together in a jar. I used a glass jar with lid that I found at SM last night at P54.00. Refrigerate the covered jar overnight.
This morning, the Mango Overnight Oatmeal
is all ready for breakfast. I can’t conceal the excitement because it’s my
first try. Wondering what it tastes, well definitely passed my expectations. I
had a very healthy and delicious breakfast this morning. Wee!
Next time, I’ll try organic milk like almond milk, the chia seeds, and other fruits. For the meantime, I’ll devote myself to mangoes because of its abundance and affordability. Mangoes can be bought as low as P20.00 per kilo these days.





I make this all the time. Sometimes I add cashew or almond nuts and chia or flax seeds. Since I discovered this, I never wanted my oatmeal hot.
